1 c Masa
1/4 c Lard
1 ts Salt
4 To 5 tablespoons cold water
Bring a pot of salted water to a gentle boil.
In a mixing bowl, combine the masa, lard and salt. Mix until the
mixture resembles, coarse crumb-like mixture. Stir in enough water to
form a soft dough. Form the dough into small balls, about 1
tablespoon each. Lightly press your thumb in the center of each ball.
Add the dumplings to the water and cook until the dumplings float to
the surface, about 4 minutes. Continue to cook for 2 minutes. Remove
and drain on paper towels. Season with salt..
Yield: about 1 1/2 dozen
