2 tb Olive oil 1 Clove garlic, minced
1 Spanish onion, chopped 1 Bay leaf
1 Green pepper, seeded and 16 oz Can stewed tomatoes
-chopped 1 1/2 lb Cod fillets
1 c Sliced mushrooms
Saute onion, green pepper, garlic, and mushrooms in oil until soft.
Add bay leaf and tomatoes; simmer 30 minutes. Preheat oven to 350.
Arrange cod in greased baking dish. Remove bay leaf from sauce; pour
over fish. Bake 40 minutes; or until fish flakes easily when tested
with a fork.
