1/4 c Onion;chopped 2 c Water
3 tb Butter 2 Bouillon;chicken;cubes
1 1/2 c Mushrooms;sliced 1/2 ts Salt
2 c Broccoli;chopped 1/2 ts Oregano
1 c Tomato;diced 1/4 c Parmesan Cheese;grated
1 c Rice;uncooked
Cook onions in butter until golden. Add mushrooms, broccoli and
tomatoes and cook about 4 minutes.
Add water and bouillon cubes and bring to a boil. Stir in rice,
salt and oregano.
Cover and cook over low heat, 20 minutes or until water is
absorbed. Stir in Parmesan cheese. Serve hot or cold.
