2 Eggs
2 tb Water
2 tb Vegetable oil
2 Green onions -- finely
Chopped
1 1/4 lb Plain boiled rice
2 tb Soy sauce
Salt
1/2 ts Sugar
1. Beat the eggs with the water in a bowl. Heat 1/2 teaspoon oil in
a wok and add the egg mixture. Swirl it around to make an omelet.
Transfer to a plate and allow to cool. When cool, cut into strips.
2. Heat the remaining oil, add the green onions and stir-fry for 2
minutes. Add the plain boiled rice and omelet strips.
3. Stir in the soy sauce, salt, and sugar and cook for 2-3 minutes.
