Cooking Preparation of the Recipe:

1 c Oat bran 2 md Peaches, peeled and cut
« cup all purpose flour -into «" dice
¬ cup whole wheat flour 1 ea Heat oven to 400F. Line a
¬ cup sugar -12 count muffin tin with
2 t Baking powder -paper baking cups.
« tsp. baking soda 2 ea In a large bowl, combine
1 ea « tsp. grated orange zest -the oat bran, flours,
« tsp. nutmeg -sugar, baking powder,
« tps. mace Baking soda, orange zest,
¬ tsp. salt -nutmeg, mace and salt.
1 c Non-fat peach yogurt 3 ea In another bowl, place the
¬ cup safflower oil -yogurt, oil and egg. Whisk
1 ea Egg -until well

blended. Stir in the peaches. Add all at once to the dry ingredients.
Stir only until moistened;the batter should be slighlty lumpy. 4.
Spoon the batter evenly into the prepared pan. Bake 20-25 minutes or
until the muffins are golden and springy to the touch. Remove the
muffins from the pan and let cool on a wire rack. From "Great Grains"
