2 lb Large shrimp, cleaned, 1 Egg
-leaving tail intact 1 c Up water
1 c Sifted flour 2 Rsp oil
1/2 ts Sugar 1/2 ts Salt
-Pinch curry powder -Oil for frying
Slit shrimp down back and spread apart butterfly fashion. Pull tail
thru slit. Combine flour, sugar, and curry powder. Add egg, water,
and 2 tsp oil; beat well. Dip shrimp in batter. Heat oil to 375 in
deep skillet or deep fryer. Fry, a few at a time, until golden brown.
Drain on paper towels.
