1 lb Green beans, trimmed
--------------------------DRESSING-------------------------------
2 tb Sherry vinegar 1 tb Ground roasted sesame seeds
2 tb Soy sauce -(see page 40)
1 1/2 tb Peanut oil 1/4 ts Pepper
1/2 tb Oriental sesame oil
1. To prepare dressing, combine the vinegar, soy sauce, peanut oil,
sesame oil, sesame seeds, and pepper. Whisk or shake in a tightly
covered jar until blended.
Can be prepared several hours in advance.
2. Steam the beans for 3-4 minutes, then plunge them in ice water.
DRain well.
3. Put the beans in a serving bowl, then toss with as mush of the
dressing as you need to coat the beans. SErve.
Can be prepared up to 3 hours ahead.
