4 slices, about 1 pound baked ham
2 packages (10 ounces each) broccoli
Sauce:
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/2 cup chicken broth
1/2 to 3/4 cup half-and-half
1 tablespoon prepared mustard or 2 teaspoons dry mustard
Dash ground nutmeg
1/2 cup shredded Swiss cheese
1/4 cup grated Parmesan cheese
Yellow or red bell pepper, for garnish, optional
1. Cook broccoli according to package directions. Drain well.
2. Prepare sauce: In a saucepan, melt butter. Add flour and stir to combine.
3. Add chicken broth and half-and-half in a steady stream, stirring all the time while heating. Cook until sauce thickens.
4. Add mustard, nutmeg and shredded Swiss cheese.
5. Place ham slices in a shallow baking dish.
6. Top with broccoli.
7. Spoon sauce over. Sprinkle with Parmesan cheese.
8. Bake at 400 degrees for 15 to 20 minutes until cheese is melted and dish has a light brown color.
9. Garnish with bell pepper, if desired. Serve.
