2 1/2 c Bread crumbs 2 ts Lemon peel -- grated
4 Cloves garlic -- minced 1/2 ts Salt
1/2 c Fresh parsley -- chopped 6 tb Butter or margarine --
6 tb Grated parmesan cheese Melted divided
1/4 c Fresh thyme -- or 1 T. 1 ea Salmon fillet -- 3 to 4
Dried Pounds
In a bowl, combine bread crumbs, garlic, parsley, cheese, thyme,
lemon peel and salt; mix well. Add 4 tablespoons butter and toss
lightly to coat; set aside. Pat salmon dry. Place skin side down in a
greased baking dish. Brush with remaining butter; cover with crumb
mixture. Bake at 350 deg. for 20 to 25 min. or until salmon flakes
easily with a fork. Yield: 8 servings.
