1 tb Margarine 1 tb Flour
2 tb Carrot, diced 2 tb Celery, diced
2 tb Onion, diced 1 c Beef broth (fat skimmed)
2 tb Tomato puree 1 ea Bay leaf
1/2 ea Garlic clove 1 x Pepper, dash
1 x Thyme leaves, dash
Melt margarine. Add flour and cook for 3 minutes. Add vegetables and
cook for 5 minutes until lightly browned. Remove from heat and stir
in broth. Add remaining ingredients and simmer for 4 to 5 minutes.
Let cool slightly. Remove bay leaf and process in blender until
smooth.
