12 oz Lumachine, farfalle or
-- elbow-shaped pasta
15 ea Sun-dried tomatoes, the
-- unmarinated type, cut
-- into strips
3 tb Olive oil
1 ea Garlic clove, chopped
Salt pepper, to taste
Thyme, to taste
Cook the pasta sun-dried tomatoes in boiling water until the pasta
is tender. Drain (the water may be reserved for soups or stews, etc
since it will be flavoured by the cooking tomatoes).
Toss in the oil, garlic, salt, pepper thyme. Serve immediately.
VARIATION: Tender, sweet summer squash adds a sunny note to this
simple pasta. Add 1 or 2 diced summer squashes -- crookneck or
zucchini -- to the cooking water with the pasta tomatoes. Also add
mangetout to add some sweetness.
