1/2 c Soy sauce 2 Cloves garlic -- minced
1/2 c Vegetable oil 7 lb Turkey -- part
2 tb Honey 1/4 c All-purpose flour -- 1/2
2 ts Ground ginger Inch cubes
1 ts Dry mustard 1/2 ts Salt
ts Lemon juice 1/2 ts Pepper -- optional
2 ts Worcestershire sauce
In a small bowl, combine the soy sauce, oil, honey, ginger, mustard,
lemon juice, Worestershire sauce and garlic. Place turkey parts in a
large plastic heavy duty freezer bag; add marinade. Close the bag;
refrigerate overnight, turning bag occasionally. Arrange turkey parts
in a single layer in a large shallow roasting pan. Pour marinade over
turkey. Bake uncovered at 325 deg. for 1 1/2 hr. or until tender.
Baste occasionally if desired. Remove turkey to serving platter and
keep warm. If desired, make gravy: Strain pan juices into a large
measuring cup. Skim fat and reserve 14 cup in a med. saucepan;
discard remaing fat. Blend flour into saucepan. Add water to pan
juices to make 2 cups. Add to saucepan; cook and stir until thickened
and bubbly. Cook and stir 1 min. longer. Season with salt and pepper.
Serve with turkey. Yield 8-10 servubgs,
