Cooking Preparation of the Recipe:

4 oz Unripe fruit such as 3 Garlic clove(s)
-green mango, goseberries, 1 Onion(s)
-tart plums, or grapes 1 tb Fish sauce (nam pla)
6 Dried red chilies 1 tb Brown sugar
1 sm Piece trassi (shrimp paste) Lime juice

Chop the fruit. Seed and chop the chilies. Wrap the trassi in foil and
grill until it darkens or cook in a preheated 350øF oven for a few
minutes. Crumble and pound the trassi or process it with the other
ingredients, adding lime juice to dilute and to taste. Stored in a
jar, it will keep in the refrigerator for a few days.
