2 tb + 2 tsp pineapple-orange 1 tb Orange peel; grated
. juice concentrate; thawed 2 sm Pears; halved cored
2 tb Orange marmalade; all fruit 1/2 c Yogurt; plain, low fat
1 tb Brown sugar; packed
1. In 8" round baking pan, combine juice, marmalade, 1 tablespoon
water, the sugar and orange peel. Place pears, cut sides down, in pan
(small ends toward center). With vented cover, microwave on High 6- 7
minutes, spooning liquid over pears once.
2. With slotted spatula, remove pears to serving plate. Refrigerate
until well chilled. Cool cooking liquid. Add yogurt to cooled liquid,
stirring to combine; refrigerate until ready to serve. Top each pear
half with 2 tablespoons yogurt mixture.
Each serving prouides: 1/4 M, 1 FR, 35 C. Per serving: 119 cal, 2g
pro, 1g fat, 28g car, 23mg sod, 2mg chol.
