24 Oysters on the half shell 1/4 c Finely chopped green pepper
4 sl Bacon, cut into 24 squares 1/4 c Finely chopped celery
1/2 c Butter 1/4 ts Fresh ground pepper
1/3 c Finely chopped shallots 1/4 ts Hot sauce
1/4 c Finely chopped parsley Juice of 1 lemon
If shallots are unavailable substitute, scallions and add a small
clove of garlic. Omit the green pepper if desired. Pre heat oven to
450 deg F. Cut the bacon into 24 small squares and pan fry until
partially cooked. Cream together the butter and all the seasonings.
Put a spoonful of butter mixture on each oyster and top with a square
of partly cooked bacon. Place the oysters in a heavy pan and bake
until butter is bubbling and bacon crisp- 5 to 8 min. Serve with
lemon wedges, hot sauce and a pepper mill to pass around.
