1/2 c Lowfat yogurt 2 Egg whites, lightly beaten
1/2 c Crushed pineapple, 1/2 ts Coconut extract
Unsweetened, drained 1/2 c Flour
3 1/2 tb Pineapple juice concentrate 1/2 ts Baking soda
Preheat oven to 375F. Spray 6 muffin cups with pam and set aside.
Combine wet ingredients. Combine flour and baking soda. Mix the two
mixtures together, spoon into muffin cups and bake until golden brown
and a toothpick inserted in center comes out clean, about 25 minutes.
