POCKET PORK CHOPS 1 T Chopped parsley
2 T Defatted chicken stock ds *each* salt and pepper
1/4 c Finely chopped onion 1/4 t Italian herbs
1/4 c Chopped mushrooms 2 ea 1-inch thick pork loin chops
1/2 sm Apple, peeled and chopped 1/2 c Unsweetened applesauce
1 T Raisins Boiling water
1/2 sl Whole wheat bread, crumbled
Preheat oven to 350 degrees. In small skillet heat chicken stock and
saute onion, mushrooms and apple until onion is translucent. In small
bowl or cup pour boiling water over raisins. Set aside a few minutes
until raisins are "plumped". Drain. Stir raisins, breadcrumbs,
parsley, and seasoning into mixture in skillet. Cut a deep pocket in
each pork chop. Fill with stuffing and secure with wooden picks. In
skillet coated with non-stick spray, brown chops quickly on both
sides. Place chops side by side in small baking dish. Pour in a
little water (just enough to cover bottom of dish) Cover and bake 35
to 45 minutes, ot until done. Serve chops with applesauce. Makes 2
servings (about 246 calories per serving) *I have a terrible time
cuting pockets in meat, so I always ask my butcher to do it for me.;-)
