1/2 c Long grain white rice
1/2 md Cucumber; diced
1/4 c Fresh mint; chopped
1/2 c Nonfat plain yogurt
Salt
Black pepper
Bring 3 to 4 quarts water to boil. Add rice; boil 10 mins. Mix
cucumber, mint, and yogurt in a serving bowl. Drain rice; add to
bowl. Add salt and pepper, to taste. Toss well.
