1 ea Onion, chopped
2 ea Garlic cloves, minced
1 tb Olive oil
1/4 c White rice, uncooked
2 ea Tomatoes, chopped
1 c Great Northern beans, cooked
1 ea Green bell pepper, chopped
2 ea Sweet potatoes, peeled
-- cubed
1 c Water
1/2 ts Salt
2 tb Parsley, chopped
Saute onion garlic in oil until translucent, about 2 minutes. Add
rice saute for 3 minutes. Add the rest of the ingredients, with the
exception of the parsley bring to a boil. Reduce heat, cover
simmer until the rice is tender, about 25 minutes. Garnish with
parsley serve.
