2 lb Red cabbage, finely shredded 2 oz Soft brown sugar
8 ea Juniper berries, crushed 1 ts Caraway seeds
1/4 pt Boiling water 1 ea Bag bouquet garni
1 ts Salt 1 tb Cornstarch
8 oz Onions, chopped 3 tb Malt vinegar
8 oz Apples, chopped 1 tb Cold water
Place red cabbage, junipers, 1/4 c boiling water salt in a large
pot. Bring to the boil, cover simmer for 30 minutes. Stir in
remaining water, onions, apples,sugar, caraway seeds bouquet garni.
Cover cook gently for 1 1/2 hours, stirring frequently.
Remove bouquet garni. Blend cornstarch with the vinegar cold water
till smooth. Stir into the cabbage cook uncovered for 10 minutes.
Stir often to prevent sticking.
