3 lb Boneless loin of pork
1 tb Fresh rosemary leaves
5 Garlic cloves, cut into
-slivers
1/4 c Olive oil
Salt
Pepper
Trim all fat from the pork. Using a paring knife, cut small deep
slits on all sides of pork and insert rosemary leaves and garlic.
Place the meat in a roasting pan, rub with olive oil and season with
salt and pepper.
Roast the pork in a 325'F. oven for 1 1/2 to 2 hours, or until a meat
thermometer reads 160'F. Let stand 20 minutes before slicing.
