10 oz Canned pink salmon; drained
1 1/3 Green onion; chopped
1 1/3 Celery stalk; diced
1 1/3 c Bean sprouts
1 tb Fresh cilantro; chopped
1/3 c Fresh mint leaves; chopped
1/3 c Or fresh parsley
4 Tomatoes
4 Leaf lettuce leaves
1 1/3 tb Sesame seeds; toasted*
-------------------YOGURT SESAME DRESSING------------------------
2 2/3 tb Yogurt
1 1/3 tb Mayonnaise
3 ts Sesame oil
3 ts Lemon juice
*Toast sesame seeds in small skillet over high heat, stirring for 2
minutes or until golden.
Combine salmon, green onion, celery, bean sprouts, cilantro and mint
or parsley. In small bowl, combine yogurt, mayonnaise, sesame oil
and lemon juice; pour over salmon mixture and mix lightly.
Quarter tomatoes, cutting almost through; place on lettuce; lined
plates; spoon salmon mixture in center. Sprinkle with sesame seeds.
