2 c Diced potatoes
3/4 c Chopped onions
1/4 c Finely chopped celery
1 1/2 c Water
1 ts Salt
Freshly ground pepper
2 c Half-and-half or evaporated
Milk
8 oz Uncooked shelled shrimp
1 tb Minced parsley
Bring potatoes, onion, celery, water, salt and pepper to a boil in a
large saucepan. Reduce heat, cover and simmer about 10 minutes. Add
half-and-half or evaporated milk and shrimp and continue to simmer to
a few minutes longer, or until shrimp turns pink. Ladle into soup
bowls; sprinkle with parsley.
