1 cn (16oz) sliced peaches,
Drained
1 cn (16oz) pear halves, drained
And chopped
1/2 ts Grated lemon peel, if
Desired
1 c Crushed gingersnap cookies,
(about 14)
1 tb Melted butter or margarine
Heat oven to 375F. Combine peaches, pears and lemon peel; mix well.
divide among 6 (6oz) custard cups.
combine cookies and butter; mix well. Sprinkle over fruit. Bake 12-15
minutes or until hot and bubbly. 6 (1/2 cup) servings.
Per serving: 140 calories, 2 g protein, 26 g carbohydrate, 0 g fiber,
4 g fat (25%), 7 mg cholesterol, 135 mg sodium, 200 mg potassium, 2
fruit and 1 fat exchange.
