Cooking Preparation of the Recipe:

1 md Jicama; peeled and julienned -chiles; seeded julienned
2 ea Red bell peppers; seeded and 1 ea Fresh jalapeno; seeded and
-julienned -chopped
2 ea Poblano peppers; seeded and 1 md Red onion; thinly sliced
-julienned 1 c Seedless grapes
2 ea Fresh green New Mexican

----------------------FOR THE DRESSING---------------------------
1 tb Cumin seeds; toasted and 1 tb Fresh lime juice
-ground in a spice mill or 1 ts Grated lime zest
-coffee grinder 2 cl Garlic; minced
1 tb Cilantro; chopped (fresh 1/2 ts Salt
-coriander) 3/4 c Extra virgin olive oil
1 tb Red New Mexican chile flakes 1/2 c Red wine vinegar

Combine all the salad ingredients in a serving bowl. Combine the
dressing ingredients in a small bowl or glass jar. Pour the dressing
over the salad, toss, and serve.
