1 lg Onion -- finely chopped Meatballs:
2 Cloves garlic -- minced 1 lb Ground beef, extra lean
2 tb Vegetable oil -- or olive 1/4 lb Ground pork
Oil 3/4 c Saltine crackers, low sodium
3 cn Tomato puree -- 10 3/4 oz Finely crushed
1 cn Tomato paste -- 12 oz 4 ea Eggs -- beaten
1 1/2 c Water 2 Cloves garlic -- minced
1/4 c Grated Parmesan cheese 3 tb Grated Parmesan cheese
1 tb Dried oregano 1 ts Dried oregano
1 ts Salt Hot Cooked Spaghetti
1 tb Sugar
In a dutch oven, saute onion and garlic in oil until tender. Add the
next seven ingredients; mix well. Simmer, uncovered for 1 1/2 hr.
Meanwhile combine beef, pork and cracker crumbs in a large bowl. Add
the eggs, garlic, parmesan cheese and oregano; mix well. Shape into 1
1/2 in. balls; brown in a skillet, turning once. Add to sauce;
simmer, uncovered 1 1/2 hours longer. Serve over spaghetti. Yield:
6-8 servings.
