1 cn Spam, cubed 1 cn Chicken broth
1 c Chopped onion 1/2 ts Dried leaf tyme
2/3 c Chopped green pepper 6 ea Dr hot pepper sauce
1/2 c Chopped celery 2 ea Bay leaves
2 ea Clove garlic, minced 1 c Rice
1 cn Stewed tomatoes, 14-1/2 oz 2 tb Chopped parsley

In large non stick skillet or 3-quart non-stick saucepan, saute spam
luncheon meat, onion, green pepper, celery, and garlic until
vegetables are tender. Add tomatoes, chicken broth, thyme, hot
pepper sauce and bay leaves. Bring to a boil; stir in rice. Cover.
Reduce heat and simmer 20 minutes or until rice is tender. Discard
bay leaves. Sprinkle with parsley.
