1 lb Soft bean curd 3 Green onion -- finely
3 tb Oil -sliced
4 oz Lean beef -- minced 1 c Chicken or beef stock
1 tb Salted black beans 1 tb Black soy sauce
1 tb Chili paste 1/2 ts Salt
1 tb Salted soy beans 2 ts Cornstarch -- blended with
1 tb Ginger root -- very finely -water
-chopped 1 ts Powdered sichuan
1 ts Garlic -- very finely Peppercorns
-chopped
Cut the bean curd in 3/4" dice. Heat oil and stir fry beef and black
beans for 3 to 4 minutes. Add chili paste, salted soy beans, ginger,
garlic and green onions. Stir fry for another 2 minutes, then add
the stock and bean curd. Simmer for 5 minutes, season with soy sauce
and salt, then thicken with cornstarch. Sprinkle with sichuan pepper
and serve.
