1 pk (10oz) spinach, cooked and 1 cl Garlic, minced
Squeezed dry 1 ts Lemon juice
1 c Lowfat cottage cheese 1 ts Low sodium soy sauce
2 tb Parmesan cheese 3/4 c Egg Beaters
1 sm Onion, minced 2 tb Toastd bread crumbs
Combine all ingredients except bread crumbs and 1 tablespoon Parmesan
and pour into a pie plate sprayed with pam. Top with bread crumbs and
cheese. Bake 20-25 minutes at 350F.
