2 tb Olive oil 10 oz Spinach; trim -- chop
1 Red pepper -- cut thin Coarse
Strips 1 12" pizza crust
1/4 c Onion -- chopped 1 c Mozzarella -- shredded
3/4 ts Salt 1/2 c Mozzarella -- shredded
1/4 ts Pepper 2 tb Pine nuts -- toasted
1/2 ts Garlic -- minced
Preheat oven to 450~. Heat oil. Add red pepper, onion, salt and
pepper; cook until tender, 3 to 5 minutes. Add garlic; cook,
stirring, 1 minute. Add spinach; cook, stirring, until wilted.
Sprinkle crust with 1 c mozzarella. Layer with veggie mixture, 1/2 c
more mozzarella and pine nut. Bake 10 miinutes. Per slice: Cal, 265,
