1/2 tb Miso 1 tb Almonds, sliced
1 tb Soy sauce 1/2 tb Oil, peanut
1/2 ts Vinegar, wine 1/4 ts Ginger, ground
1/4 ts Oil, sesame 1 lb Spinach, fresh
Trim, wash, and drain spinach. Cut into 1" to 2" widths. Mix miso,
soy sauce, vinegar, and sesame oil; set aside.
Heat wok over high heat. Add almonds and stir-fry until fragrant and
edges turn golden, about 45 seconds. Transfer to plate.
Heat peanut oil in wok. Add spinach and ginger and stir-fry just
until tender, about 3 minutes. Drizzle with bean mixture. Serve
immediately!
