1 sm English cucumber 2 tb Vegetable oil
1 sm Onion, sliced thinly 1 tb White sugar
3 tb White vinegar 1/2 ts Salt (optional)
2 tb Lemon juice pn Pepper, or to taste
With fork, score cucumber lengthwise. Cut in half, lengthwise, and
slice thinly crosswise. Slice onion thinly and combine in a bowl
with the cucumber. Whisk together remaining ingredients and pour over
cucumber/onion mixture. Refrigerate for at least 4-5 hours to allow
flavours to blend. Makes about 4 servings. Origin: Adapted from
