1/2 c Olive oil 2 lg Garlic cloves, fine chopped
1/4 c Lemon juice, fresh 1 tb Oregano, dried
2 tb Hot water 6 Swordfish fillets (6 oz ea.)
6 tb Parsley, fresh, chopped
Preheat broiler or BBQ. Whisk olive oil in top of double boiler over
simmering water until heated through. Gradually add the lemon juice,
then 2 Tbsp hot water. Add chopped parsley, garlic and oregano; cook
sauce 5 minutes to allow flavors to blend, whisk frequently. Season
sauce with salt pepper to taste, remove from heat.
Lighty brush fish on both sides with sauce. Season with salt pepper.
Grill or broil until just cooked through, about 5 minutes per side.
Arrainge fish on platter and spoon remaining sauce over.
