3 c Chopped cooked chicken meat -separated into rings
1 Cucumber, peeled, seeded 1 tb Minced fresh ginger root
-and shredded Lime-Mint Dressing
2 c Fresh bean sprouts 1/2 c Chopped fresh cilantro
2 Fresh jalapeno chilies, -(leaves and stems)
-seeded and minced 1/4 c Chopped peanuts, toasted
1/2 sm Red onion, sliced thin and
In a large bowl, mix chicken, cucumber, bean sprouts, chilies, onion
and ginger root. Toss with Lime-Mint Dressing. Gently toss in
cilantro. Serve immediately, sprinkled with peanuts.
NOTE: If not serving immediately, refrigerate ingredients and dressing
separately. Toss just before serving.
