1 lg Head cabbage, washed, cored
-and sliced
4 sl Bacon, diced
1 md Onion, sliced
1 Clove Garlic, minced
1 16-oz can chopped tomatoes
1 6-oz can tomato juice
2 oz Louisiana Hot Sauce
1 c Beef Consomme
Cajun Seasoning - Tony's or
Prudhomme's
1/2 c Sugar
In a 4-quart saucepan, saute bacon, onion, and garlic until onion is
limp. Add tomatoes, juice, and Louisiana Hot Sauce; simmer 15 minutes.
Add cabbage, consomme and Cajun seasoning (start with 1 teaspoon,
then season to taste). Cover and let simmer 1 hour, adding sugar
after 45 minutes. Stir occasionally to prevent sticking.
