12 plum (Roma) tomatoes
2 tb parsley, minced
2 tb basil, minced, or 1 tsp dried
1 tb oregano, minced, or 1 tsp dried
2 tsp thyme, minced, or 1/2 tsp dried
1 garlic clove, minced
1/4 tsp salt
Pepper to taste
Put half the tomatoes in a blender. Heat the oil in a nonstick saucepan, then add
remaining ingredients. Cook, stirring frequently, until reduced to about 2 cups, about 15
minutes.
