12 Italian plum tomatoes, 1 tb Olive oil (opt)
-sliced 2 tb Wine vinegar
1 bn Basil, coarsely chopped Freshly ground pepper
1 Maui or red onion, thinly Chives
-sliced
Arrange tomato slices on serving platter or 6 individual plates. Top
with basil and onion slices. Sprinkle with oil, vinegar and pepper.
Garnish platter with long, uncut chives. Makes 6 servings. Recipe can
be prepared at least 1 hour before serving.
