1 c Mashed potatoes -canola oil, lightly flaked
1 md Onion, finely chopped -with fork
1 tb Plain nonfat yogurt -pepper to taste
1/4 c Chopped dill, lightly 2 Egg whites, lightly beaten
-packed 1/4 c Plain nonfat yogurt
2 ts Fresh lemon juice 1 ts Dijon mustard
1 cn (9 1/4oz) tuna packed in
Combine potatoes, onion and yogurt until smooth. Stir in dill, lemon
and pepper. Lightly fold in tuna. Pour in egg whites and mix. Divide
misture into 6 croquettes. Spray a large nonstick skillet with butter
flaovred Pam. Heat skillet over medium heat until hot. Cook 1 1/2
minutes on each side or until nicelybrowned and heated through.
Combine yogurt and mustard. Blend until creamy. Place croquettes on
whole grain buns and top each with 2 tablespoons of mustard cream on
each, lettuce and tomato. Serve.
