1 1/2 c Bow tie pasta -- uncooked 2 ts Cooking oil
1 lb Beef tenderloin tips -- cut 1 1/2 tb All-purpose flour
In 1" pcs 3/4 c Low-sodium beef broth
1/8 ts Pepper 1 tb Green onions -- sliced
1/2 lb Mushrooms -- sliced 1/4 c Light sour cream
1/3 c Onion -- coarsely chopped
Cook the pasta according to package directions; drain and keep warm.
Coat a large skillet with nonstick cooking spray and heat on
medium-high. Cook and stir beef, half at a time, for 1-2 minutes or
until browned. Season with pepper. Remove and keep warm. In the same
skillet. Saute mushrooms and onion in oil until tender. Stir in
flour. Gradually add broth, stirring until blended. Bring to a boil;
cook and stir for 2 minutes. Return beef to skillet and heat through.
Serve over pasta. Top with green onions and sour cream. Yield: 4
servings. Diabetic Exchanges: One serving equals 4 lean meat, 1-1/2
starch, 1 vegetable; also, 393 calories, 154 mg sodium, 87 mg
cholesteroi, 32 gm carbohydrate, 34 gm protein, 13 gm fat
