6 veal loin or rib chops, about 1/2
inch thick (about
3 pounds)
Caramelized Onions
CARAMELIZED ONIONS
3 cups sliced red onions (about
2 medium)
1/4 cup water
1/4 cup packed light brown sugar
1/4 cup chopped golden raisins
1/2 cup white wine or apple juice
1/3 cup white wine vinegar or white
vinegar
1 teaspoon ground sage
1 teaspoon olive or vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground red pepper
(cayenne)
Prepare Caramelized Onions. Set oven control to broil. Spray broiler pan rack with nonstick cooking spray. Trim fat from veal chops. Place veal on rack in broiler pan. Broil with tops 5 to 7 inches from heat 8 to 10 minutes for medium doneness (160 degrees). Top with Caramelized Onions. 6 servings
CARAMELIZED ONIONS
Cover and cook onions and water in 2-quart saucepan over medium heat 5 minutes. Stir in remaining ingredients; reduce heat to medium-low. Cover and cook about 50 minutes, stirring occasionally, until thickened.
