6 md Onions, peeled and cut into 1/2 ts Salt
-1/2" 1/4 ts Pepper
Slices 1 c (4 oz.) shredded Cheddar
1/4 c Plus 1 Tbsp. butter, melted -cheese
3 tb Self-rising flour (optional)
1 1/2 c Milk
Saute' onion in butter in a medium saucepan over medium-high heat
until tender. Reduce heat to medium; sprinkle flour over onion and
stir until smooth. Cook 1 minute, stirring constantly. Gradually
add milk, stirring until smooth; stir in salt and pepper. Cook,
stirring constantly, until thickened. Stir in cheese until melted,
if desired. Pour into a serving bowl. Serve with roast, meatloaf,
or hamburger steaks and biscuits or grits, of course.
