Cooking Preparation of the Recipe:

3 (or 4) lemons 1 Egg white
1/4 c Mint leaves plus 3 1/2 c Sparkling water
4 Mint sprigs for garnish 2 c Crushed ice
1/3 c Sugar

Juice the lemons. There should be 3/4 cup juice. Wash and stem the
mint leaves. Combine the lemon juice, mint leaves, sugar, and egg
white in a blender. Blend at high speed for 1 minute. Add the
sparkling water and ice. Blend until the mixture is smooth. Pour into
glasses and garnish with mint sprigs.
