8 lg Russet potatoes (about 5
-pounds)
1 tb Oil
1/4 c Basil leaves -- chopped
1 Clove garlic -- minced
3 tb Olive oil
4 tb Butter -- softened
Salt and pepper
Preheat the oven to 400. Scrub the potatoes, pat dry, and rub with a
light film of vegetable oil. Bake the potatoes for 1 hour, or until
tender. Cook the basil leaves and garlic in the olive oil until
wilted, about 30 seconds. Mix into the butter and season liberally
with salt and pepper. Serve 4 potatoes with 8 tbsp basil butter.
Reserve 4 potatoes for Crocked Blue Cheese Potatoes and Ham.
