1 c Yellow split mung beans 3 md Potatoes, peeled, quartered
2/3 c Finely chopped onions 1 ts Salt
1 tb Grated ginger 1 tb Olive Oil
2 ts Minced garlic 1 ts Cumin seeds
1/2 ts Turmeric 2 ts Lemon juice
4 ea Habanero's Peppers 2 tb Chopped coriander leaves
3 c Vegetarian broth
Wash mung beans. Put in a deep pot with onions, ginger, garlic,
turmeric, Habaneros's, cumin 3 cups water. Bring to a boil
simmer for 45 minutes.
Add potatoes, salt another 2 cups water. Cook for 15 minutes.
Add lemon juice coriander leaves. Mix well. Serve with plain cooked
rice.
