In kaltes Wasser Salz und etwas Essig geben und das Hirn in diesem
Wasser kochen. Abkuehlen lassen und dann herausnehmen, auf einen
Teller legen. Olivenoel mit Zitronensaft mischen, daruebergiessen.
Mit gehackter Petersilie und Oliven garnieren.
