9 sl Bacon; cut in 1/2" pieces -shelled (about 6 cups)
1 sm Onion; chopped 1 sm Jalapeno pepper; chopped
4 Cloves garlic; minced 1/2 ts Pepper
4 c Water 1 c Minced cooked ham
2 lb Fresh black-eyed peas, 1/4 c Chopped green onions
Cook bacon in a Dutch oven until crisp; remove bacon with a slotted
spoon, reserving 2 tablespoons drippings in Dutch oven. Drain bacon,
and set aside.
Saute' onion and garlic in reserved drippings until tender. Add
water, peas, jalapeno, and pepper. Bring to a boil. Cover, reduce
heat, and simmer 1 hour. Add bacon, ham, and green onions, and cook
an additional 15 minutes. Yield: 6 to 8 servings.
