6 sm Firm potatoes 1/2 ts Turmeric
6 tb Oil 1/4 ts Cayenne
3 ea Whole red chiles 1 ts Salt
1/2 c White poppy seeds, ground 3 ea Fresh hot green chiles
Peel dice potatoes.
Heat oil in a non-stick skillet. When hot, put in the potatoes fry
till they are golden brown, stirring frequently. When they are
golden, remove set aside.
Put red chiles into the oil, when they darken, add poppy seeds 2 tb
water. Stir saute until the paste browns. Put in the potatoes,
3/4 c water the spices. Stir to mix simmer, covered, for 10
minutes.
