1 cn Black beans (15- to 16-oz.)
-- rinsed, drained
1/3 c Chopped red onion
1/4 c Dry breadcrumbs
2 tb Bottled chunky salsa; plus..
1/2 c Bottled chunky salsa
1 ts Ground cumin
1/2 ts Hot pepper sauce
-- (such as Tabasco)
Vegetable oil
2 Whole wheat hamburger buns
In a medium bowl, mash beans with a fork. Mix in onion, breadcrumbs,
2 tablespoons salsa, cumin, hot pepper sauce, and salt and pepper to
taste. Shape bean mixture into two 3- to 4-inch patties.
Prepare barbecue or preheat broiler. Brush barbecue rack with oil.
Cook burgers 3 minutes before turning, then let cook another 3
minutes, or until completely heated through. Lightly toast buns on
grill (about 1 minute). Serve burgers on buns, with 1/4 cup of salsa
on each.
