2 tb Corn oil
2 Onions, chopped
3 Garlic cloves, minced
3 Carrots, chopped
1 cn Tomatoes, drained (28 oz)
1 cn Tomato juice (46 oz)
2 cn White beans, drained (15 oz)
1/2 ts Sugar
1/4 ts Cayenne pepper
1/2 cn Tomato paste (6 oz)
1/2 c Elbow macaroni
Heat oil in medium pan. Add onions and saute over low heat until
tender. Add garlic and saute until tender but not brown. Add carrots,
tomatoes, tomato juice, white beans, sugar, cayenne, and tomato
paste. Simmer until carrots are tender, about 15 minutes. About 10
minutes before serving, add macaroni and simmer until AL DENTE.
